Chocolate Covered Bacon

This may be one of the best things we have done on the egg yet -BACON!  IT was an afterthought after we cooked beer can chicken.

we upped the temp on the egg to about 400. then grabbed our cast iron skillet and put it on the egg.  we let it heat up then we simply started cooking the back.

once these cook for a bit you can fit more on.  you’ll also start getting a lot of grease so be careful not to burn yourself.

 

Eventually they bacon will be done and look like this…

Next, melt some Hershey bars down and start to dip the bacon and you’re done!

Green Egg 90 minute ribs

we just did this recipe for Labor day weekend and they turned out Great!

  • Start with good quality baby back ribs – one rack or two.  We put a rub on one and left the other plain.
  • Get the Green Egg to 350 degrees.  Here i had the daisy wheel off and the top wide open and the vent about an inch open.
  • put the ribs on meat side up for 30 minutes.
  • after 30 minutes flip and do them for another 30
  • Next pull the ribs off the egg and baste them in bar b q sauce
  • now wrap them in tin foil and put them back on the egg for 30 minutes – we only have them in for about another 10.
  • pull off when the rack bends at about 45 degrees.
  • Enjoy!
